WenZheng Mountain bamboo shoots is a traditional famous dish in Huizhou region, Anhui Province, made by stewing bamboo shoots produced in WenZheng Mountain of Shexian County. In the traditional cooking method, it is usually stewed together with preserved pork, hence it is also known as "Preserved Fragrance Wen Zheng Shoots." Later, the dish was enhanced with the addition of sausages, mushrooms, and other aromatic ingredients, earning it the name "Double Fragrance Wen Zheng Shan Shoots." The shoots are red in color and the meat is white, with a tender texture and a fresh taste. With the addition of seasoning during the cooking process, the finished dish is crispy, tender, and slightly sweet, reminiscent of fresh bamboo shoots, making it incredibly appetizing.
